Dinner is served!

CW was usually the cook when we lived in Baltimore...unfortunately he is too busy with school now, so I had to step up and start making dinner (that's why I'm here)!  The selection at the grocery store is very limited compared to a US grocery store, so I try and be creative with dinner.  Sometimes we cant get chicken, beef, cheese, pasta...every trip to the store is an adventure.

Here are a few of the things I make for dinner...

Ochre ("ochro" in Grenada) Chicken Pasta

Chicken sautéed in Italian dressing with ochre sautéed in butter,
over lemon-pepper angel hair pasta,
with a sprinkle of parmesan cheese.

Simple Beef Chili

Browned ground beef,
salsa,
corn
and black beans
with melted jalapeño cheddar cheese

Eggplant Parmesan

Fresh eggplant fried lightly in olive oil
then heated in a 7-herb tomato sauce (from a jar...cheating, I know)
with mozzarella and parmesan cheese,
served over vegetable linguine

Teriyaki Pepper-Steak with Thai Sesame Noodles and Caramelized Carrots

Sliced steak with black pepper cooked in teriyaki sauce
with Lipton’s Thai Sesame Noodle Side (cheating...hey, we lack serious ingredients)
and fresh peeled carrots lightly boiled and then sautéed in butter and brown sugar
